Homemade Tomato Soup

I've never been a huge fan of tomato soup.  I mean, sure, throw some grilled cheese triangles next to it and I'll probably eat some.  But the canned stuff?  It's just not THAT great.  This, however, is an incredible alternative!  
Finely dice a couple carrots, an onion, some garlic, and saute for a while (10-20 min.) until mostly tender.  (Isn't it pretty?  Smelled great too!)


Boo decided to help.  He's such a dear.

Whilst you do that, roast some 'maters.  I used my canned tomatoes from last week, strained the juice and set aside, generously drowned them in olive oil, salted, peppered, and jammed 'em in the oven at 450 until they scream.  I dunno, the recipe I was working off of said to do this until they were caramelized, but I have no clue what caramelized tomatoes look like.  I know what they DON'T look like, though, and you can also see that above.  (I made more, fyi)


Boo then decided to taste test the onions.  Gotta make sure they're good and all that.  I wish you could get a good glimpse of his face in the middle picture.  That and how quickly he put it down afterwards...


Right, so bring the sauteed veggies, roasted tomatoes, and juices from the can to a rolling boil for 5 minutes, toss in some basil, a healthy pinch of sugar, and salt and pepper to taste.  I put some cream cheese in mine to make it melty delicious, and serve with cheese toast.  That part is MANDATORY.

This was incredible!  I am really not a huge tomato soup fan, but I had three bowls.  My favorite part is that the ingredients are tomatoes, carrots, onions, and spices.  What's unhealthy about that?  A little olive oil, but no heavy cream or anything.
